I have been using my Greek recipe for green beans in olive oil with tomatoes and onions for the excess runner and French beans from Peter’s vegetable plot. These have been frozen, that was until I got to the point where the freezer was full and when we gave a few bags away. The question was; how to create more space in the freezer? Firstly, I took out the raspberries, frozen a few weeks ago, which made eight jars of jam. The next step was a decision not to go to the butchers on Friday and instead use some of the various meats, I have accumulated in the freezer. This is working fairly well, apart from trying out some Greek vegetarian recipes which have done nothing to reduce the freezer level. As well as the beans there have been plenty of courgettes, some made into fritters and frozen, carrots, chard and salad vegetables to eat. Currently, our daily diet allows us to achieve double the recommended ‘five a day’!
