Sunday 22nd January 2017 - Zigzag, Re-opened, Beach Huts, Storm Debris, Frosty Morning and Hayley Moyses' Blue Grass Three

It may be winter and very cold but we are able to reap the benefits, of having a vegetable plot and freezing some of its summer produce. On Tuesday I made the Greek dish, spanakopita (feta cheese and chard/spinach pie) which I served with green beans in olive oil and some homemade bread. I used chard, cooked and frozen in the summer, in the spanakopita and the green beans in olive oil; I also cooked during the summer months, using runner beans and onions from Peter’s vegetable plot. Knowing it freezes well, I made a large dish to the spanakopita and as I have not published this recipe in my book ‘The 3R’s – Recipes, Reflections & Reminiscences’, I have added it to my recipe pages. My recipe for green beans in olive oil, is within the pages of The 3R’s and for this reason, I have not included it here on my website.
